Turkey steaks with mushrooms and spinach

Lean turkey steaks make a healthy dinner choice.
Ingredients:
  • 650g chat potatoes, halved
  • 56.88 gm olive oil
  • 4 (100g each) turkey breast steaks
  • 350g cup mushrooms, sliced
  • 40.00 ml chopped fresh thyme leaves
  • 150g baby spinach
Instructions:
  • Preheat your oven to 240ºC/220ºC fan-forced. Line a large baking tray with parchment paper.
  • In a bowl, combine potato with 1 tablespoon of oil. Season with salt and pepper, then toss to coat evenly. Transfer to a prepared baking tray and bake for 25-30 minutes until golden and crispy.
  • In a hot frying pan, sear steaks in 1 tablespoon of oil for 2 to 3 minutes per side until done. Plate and cover to retain heat.
  • In the same pan, heat the rest of the oil. Add mushrooms and cook for 3 minutes until softened. Stir in garlic, thyme, and spinach. Cook for 2 minutes until spinach wilts. Serve the steaks with the mushroom mixture and potato.
