Spicy Mediterranean roasted broccolini with garlic, oregano, and feta - ideal with steak or salmon.
Ingredients:
  • 2 bunches broccolini
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon crushed red pepper
  • 0.5 teaspoon ground black pepper
  • 0.25 cup crumbled feta cheese
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and slickly line a baking sheet with parchment paper.
  • Trim off the ends of the broccolini and discard any leaves. Place the broccolini in a large resealable plastic bag.
  • In a small bowl, mix together oil, vinegar, salt, garlic powder, oregano, crushed red pepper, and black pepper. Drizzle over broccolini and toss gently to ensure everything is coated. Cover and marinate for 5 to 10 minutes, flipping halfway through.
  • Arrange the broccolini in a uniform layer on the baking sheet and sprinkle with crumbled feta cheese.
  • Roast in a preheated oven until the tops are nicely browned and the stems are crisp-tender, approximately 15 minutes.
