1-2-3 Pork Tenderloin with Apricot-Mustard Glaze

Renowned chef Beth Dooley from Seasonal Appetites presents a beloved recipe.
Ingredients:
  • 2 pork tenderloins (about 3/4 pound each)
  • 1 teaspoon salt
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon coarsely ground pepper
  • 1 tablespoon olive oil
  • 1/2 cup fresh orange juice
  • 2 tablespoons Dijon-style mustard
  • 2 tablespoons brown sugar
  • 1 teaspoon grated orange peel
  • 1/4 cup chopped dried apricots
Instructions:
  • Preheat oven to 450°F. Combine salt, thyme, and pepper in a small bowl, then season the pork by rubbing the mixture over it.
  • In a large, heavy skillet over medium-high heat, heat oil. Add pork and cook, turning with tongs, until nicely browned, about 4 minutes per side. Transfer pork to a 15x10-inch baking pan with sides.
  • In the same skillet over medium heat, combine orange juice and mustard, using a whisk to incorporate any flavorful browned bits. Remove from heat and mix in brown sugar, orange zest, and apricots. Pour over the pork.
  • Bake uncovered, brushing with the sauce every so often, until pork is slightly pink in the center and a meat thermometer reads 160°F when inserted.
  • Let the dish rest for 10 minutes after removing it from the oven before serving.
  • Place the pork on a cutting board and slice it into medallions diagonally following the grain of the meat.
