Slow-Cooker Smothered Pork Chops

Slow cooker pork chops cooked in flavorful bacon gravy, for a tender and moist family favorite.
Ingredients:
  • 4 bone-in pork chops, about 3/4 inch thick (1 1/2 to 2 lb)
  • 1/2 teaspoon pepper
  • 4 slices bacon, cut into 1/2-inch pieces
  • 1 large yellow onion, cut into 1/2-inch thick slices
  • 2 cloves garlic, finely chopped
  • 1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 2 teaspoons Worcestershire sauce
  • 2 bay leaves
  • 2 tablespoons cornstarch
  • 1 tablespoon cider vinegar
Instructions:
  • Prepare the 4-quart slow cooker by spraying it with cooking spray. Then, gently dry the pork chops with paper towels and season both sides with salt and pepper.
  • In a 12-inch nonstick skillet over medium heat, cook the bacon until browned, for about 6 to 8 minutes. Remove the bacon using a slotted spoon and transfer it to the slow cooker. Leave about 1 tablespoon of bacon fat in the skillet, discarding the rest. Increase heat to medium-high and add the pork chops to the skillet with bacon drippings. Cook each side for 3 to 5 minutes until browned. Stand the pork chops upright against the sides of the slow cooker, bone side down.
  • In a skillet, sauté onions for 3 to 5 minutes until softened. Stir in garlic and cook for 30 seconds. Transfer the mixture to a slow cooker. Add broth, Worcestershire sauce, and bay leaves. Cover and cook on Low for 1 1/2 to 2 hours, until pork chops are just cooked through (reaching at least 145°F in the center while still remaining moist).
  • Take out the pork chops and cover them with foil to keep warm. Remove and discard the bay leaves, then switch the slow cooker to High heat setting.
  • In a small bowl, whisk together cornstarch, vinegar, and water until smooth. Pour this mixture into the liquid in the slow cooker. Cover and cook for 15 to 20 minutes until slightly thickened.
  • Cover pork chops in a delectable sauce and enjoy right away.
