Slow-Cooker Smothered Swiss Steak

Smother juicy round steak in a savory gravy made with canned soup, tomato sauce, and mushrooms.
Ingredients:
  • 2 teaspoons vegetable oil
  • 1 1/2 lb boneless beef top round steak, trimmed of fat
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium onion, halved lengthwise, thinly sliced
  • 1 medium carrot, shredded
  • 1 can (4 oz) mushroom pieces and stems, drained
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 1 can (8 oz) tomato sauce
Instructions:
  • Heat oil in a 10-inch skillet over medium-high heat. Season beef with salt and pepper, then place in skillet. Cook for 4 to 6 minutes, turning once, until well browned.
  • Prepare your 3- to 4-quart slow cooker by spraying it with cooking spray, then combine onion, carrot, and mushrooms in the cooker.
  • Cut the seared beef into 4 pieces and place them over the vegetables in the cooker. In the same skillet, combine the soup and tomato sauce, then pour this flavorful mixture over the beef.
  • Cover the dish and let it simmer on a Low heat setting for 8 to 10 hours. Before serving over beef, make sure to give the sauce a good stir.
