Indulgent slow cooker Southern chicken dish with creamy bacon goodness. Ultimate comfort food.
Ingredients:
  • 3 slices bacon, cut into 1/2-inch pieces
  • 8 boneless skinless chicken thighs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 oz sliced mushrooms
  • 1 tablespoon vegetable oil
  • 1 medium onion, halved and sliced
  • 2 cloves garlic, finely chopped
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1/3 cup heavy whipping cream
Instructions:
  • Grease a 3- to 4-quart slow cooker with cooking spray.
  • Preheat a 12-inch skillet over medium heat. Cook the bacon until crispy, then transfer it to the slow cooker using a slotted spoon. Leave 2 tablespoons of drippings in the skillet.
  • Season the chicken thighs generously with salt and pepper. Increase the heat to medium-high and carefully place the chicken thighs in a skillet. Cook for approximately 3 minutes on each side until they are nicely browned. Transfer the chicken thighs to a slow cooker. In the same skillet, add the mushrooms and cook for about 4 minutes, stirring occasionally, until they are golden brown. Transfer the mushrooms to the slow cooker.
  • Lower skillet heat to medium; add oil and onion. Sauté for about 4 minutes until softened. Introduce garlic; sauté for 1 minute. Transfer content to slow cooker. Mix in condensed soup; cover and cook on High for 3 hours until chicken is tender. Stir in whipping cream; cover and cook for 10 minutes until hot. Serve with angel hair pasta, if desired.
