2-ingredient lemon whip recipe

Easy and tasty 2-ingredient lemon dessert.
Ingredients:
  • 85g pkt Jelly Lemon
  • 375ml can chilled full-fat evaporated milk (see note)
  • Whipped cream, to serve
  • Finely grated lemon rind, to serve
Instructions:
  • In a large jug, gently dissolve jelly in 1 cup of boiling water. Once smooth, pour the mixture into a shallow dish to set in the refrigerator for about 1 hour until it reaches the desired wobbly consistency.
  • With an electric mixer, whisk milk until thickened and doubled in volume for about 5 minutes. Gradually mix in jelly on medium speed. Increase speed to high and beat for 2 more minutes until well combined.
  • Divide the mixture evenly among four 300ml capacity serving glasses. Refrigerate for 2 hours or until firm. Serve with a dollop of whipped cream and a sprinkle of citrus rind on top.
