Dukkah beef carpaccio

Ingredients:
  • 500 g piece of fillet steak
  • 300 g radishes ideally with leaves
  • 1 pomegranate
  • 2 preserved lemons (20g each)
  • 1 heaped tablespoon dukkah
Instructions:
  • - Season the steak with ½ tablespoon of olive oil, sea salt, and black pepper. Sear the steak on all sides in a hot non-stick pan for 3 minutes total. Transfer to a cutting board. - Slice the radishes thinly, saving any nice leaves. Extract pomegranate seeds into a bowl by bashing one half with a spoon. Sieve juice from the other half into a separate bowl. - Quarter preserved lemons, remove seeds, and finely chop the rind. Combine rind with pomegranate juice, 1 tablespoon of olive oil, and red wine vinegar. Season to taste. - Slice the steak thinly and flatten each slice with a knife. Plate the steak, add radishes, dressing, and sprinkle with dukkah and pomegranate seeds. Finish with a drizzle of olive oil.
