Middle Eastern beef sausage rolls

Upgrade your sausage roll game with a flavorful Middle Eastern twist.
Ingredients:
  • 500g pumpkin, peeled, seeded, cut into 5mm slices
  • 500g 3 Star Beef Mince
  • 15.00 gm Moroccan spice mix
  • 125.00 ml fresh breadcrumbs
  • 62.50 ml Tasty Cheddar, shredded
  • 62.50 ml chopped flat-leaf parsley
  • 2 eggs
  • 3 sheets Frozen Brand Puff Pastry
  • 20.00 ml pistachio dukkah
  • 250.00 ml Brand Greek-style Yoghurt
  • 1 garlic clove, crushed
  • 1 tsp finely grated lemon zest
Instructions:
  • Preheat the oven to 200°C or 180°C fan. Line 2 large trays with baking paper. Toss pumpkin with oil in a bowl. Spread in a single layer on 1 tray and bake for 20 minutes until tender. Cool on a board, then chop coarsely.
  • Combine the pumpkin, mince, Moroccan spice mix, breadcrumbs, cheese, parsley, and 1 egg in a large bowl. Season generously and mix until fully incorporated.
  • Cut each pastry sheet in half, then slice each half into 3 rectangles. Spread 2 tablespoons of filling along one short side of a rectangle. Roll up the pastry to enclose the filling, placing it seam-side down on a tray. Repeat with the rest of the pastry and filling to create 18 rolls. Alternatively, you can make long sausage rolls by halving the pastry sheets and cutting them into thirds.
  • In a small bowl, beat the last egg with a fork until silky. Brush it over the rolls, sprinkle with dukkah, and bake for 30 minutes until golden and puffed, and the filling is fully cooked.
  • In a bowl, mix together yogurt, lemon juice, and garlic. Season with your favorite spices and garnish with lemon zest.
  • Enjoy the warm rolls with the sauce.
