Ingredients:
  • 1kg dried mixed fruit
  • 600ml milk
  • 35g (1/3 cup) Milo
  • 300g (2 cups) self-raising flour
Instructions:
  • Combine dried fruit in a large bowl. Whisk milk and Milo until dissolved, then pour over fruit. Stir to combine, cover, and refrigerate overnight.
  • Allow the bowl to sit out at room temperature for 30 minutes after taking it out of the fridge.
  • Preheat your oven to 180°C (160°C fan forced) and prepare a 22cm round cake pan by greasing it and lining the base and sides with baking paper.
  • Gently combine the sifted flour with the room-temperature fruit mixture. Transfer the batter into the prepared pan, ensuring a smooth surface. Bake for 1 hour 30 minutes or until a skewer inserted in the center comes out clean. Let it cool in the pan for 1 hour until slightly warm, then transfer to a wire rack to completely cool down before serving.
