4-minute microwave passionfruit and lemon curd recipe

Ingredients:
  • 4 eggs
  • 115g (1/2 cup) caster sugar
  • 125ml (1/2 cup) fresh lemon juice
  • 4-5 passionfruit, pulp strained and seeds discarded (you need 1/3 cup passionfruit juice)
  • 100g butter, chopped
Instructions:
  • In a microwave-safe bowl, whisk together eggs, caster sugar, fresh lemon juice, and passionfruit pulp. Stir in butter. Microwave on Medium, whisking every minute, for about 4 minutes until the curd thickens. Transfer the curd into sterilized jars, seal, and refrigerate.
