Mexican-style stuffed hot potatoes

Spice up baked potatoes with Mexican flair for a quick, 25-minute meal.
Ingredients:
  • 4 (about 200g each) coliban potatoes, unpeeled
  • 80ml (1/3 cup) taco sauce
  • 90g (1/3 cup) light sour cream
  • 1 avocado, halved, stone removed and coarsely chopped
Instructions:
  • Cover a microwave-safe plate with paper towel. Use a fork to puncture the unpeeled coliban potatoes all over. Place the potatoes on the prepared plate. Microwave on High/800 watts/100% power for 15 minutes or until tender. Let them sit for 3 minutes or until cool to the touch.
  • 1. Carefully slice off the tops of the potatoes using a sharp knife, then set them aside. Fill each potato with taco sauce, light sour cream, and avocado. Sprinkle with pepper before serving.
