Delicious Mexican-style stuffed baked potatoes for the whole family to enjoy!
Ingredients:
  • 6 large Sebago potatoes, scrubbed
  • 36.40 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 500g beef mince
  • 1/2 tsp chilli powder
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 62.50 ml chopped fresh coriander leaves
  • 4 iceberg lettuce leaves, shredded
  • 82.50 ml grated tasty cheese
  • 1 avocado, diced
  • 1 large tomato, seeded, diced
  • Sour cream, to serve
  • Extra fresh coriander leaves, to serve
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced) and line a baking tray with parchment paper. Pat dry the potatoes with paper towels, poke them all over with a fork, then place them on the tray. Drizzle with half of the oil and generously season with salt and pepper.
  • Roast until golden and tender, approximately 1 hour and 15 minutes. Let the potatoes stand for 5 to 10 minutes until cool enough to handle.
  • Heat the remaining oil in a large frying pan over medium-high heat. Saute the onion for 5 minutes until softened. Add the mince and cook for 6 to 8 minutes until browned, breaking it up with a wooden spoon. Sprinkle in the chili powder, cumin, and ground coriander, and cook for an additional 3 to 4 minutes until heated through. Remove from heat, season with pepper, and stir in fresh coriander.
  • 1. With a small knife, make a cross incision on the top of each potato. Gently squeeze the base to open them up, then arrange on plates. Fill each potato with lettuce, spoon over the mince mixture, and top with cheese, avocado, and tomato. Finish by adding dollops of sour cream and extra coriander leaves for garnish before serving.
