Impress loved ones with decadent chocolate pavlova topped with whipped cream and juicy strawberries.
Ingredients:
  • 330g caster sugar
  • 6 Free Range Egg whites
  • 20.00 gm cocoa powder
  • 500g strawberries
  • 300ml double cream
Instructions:
  • Preheat your oven to 120C and line a baking tray with baking paper, setting aside 2 tsp of the sugar for later use.
  • Using an electric mixer, beat the egg whites in a clean, dry bowl until stiff peaks form. Slowly add the remaining sugar, 1 tablespoon at a time, beating well after each addition. Keep beating for 5 minutes or until the sugar is fully dissolved.
  • Sprinkle cocoa powder over the meringue mixture, then gently swirl with a large metal spoon. Spoon the mixture onto the lined tray and shape into a 20cm-diameter dome. Bake for 1 hour until meringue is dry to the touch. Turn off the oven and let it cool with the door slightly open for another hour until completely cool.
  • Slice the strawberries while leaving some whole, then mix them with the sugar in a medium bowl. Let it sit for 10 minutes or until the juices are released.
  • Gently place the pavlova on a serving plate and spoon the cream and strawberry mixture on top.
