  • 2 cups white sugar
  • 0.5 cup unsweetened cocoa powder
  • 1 cup whole milk
  • 4 tablespoons unsalted butter, sliced and softened
  • 1 teaspoon vanilla extract
Instructions:

  • Prepare the 8-inch square baking pan by greasing it.
  • In a medium saucepan, combine sugar, cocoa powder, and milk. Stir until well blended. Heat the mixture over medium-high heat, stirring constantly until it boils.
  • Lower the heat and insert a candy thermometer into the pan. Allow the mixture to gently simmer untouched until it reaches 238 degrees F (114 degrees C) on the thermometer, approximately 10 minutes.
  • Test the mixture by dropping a small amount into cold water; it's ready when it forms a soft ball that flattens when placed on a flat surface after being removed from the water.
  • Let the fudge mixture cool down to 110 degrees F (43 degrees C) for 50 to 70 minutes without moving it.
  • Combine rich butter and fragrant vanilla with the fudge. Stir vigorously with a wooden spoon until the mixture is smooth and glossy, making sure not to undermix.
  • Pour the decadent fudge into the pan and use gentle pressure to create an even layer. Allow it to cool either at room temperature or in the refrigerator until set, then cut into delightful 1-inch squares.
