Quick and delicious scratch-made chocolate cake topped with tangy buttermilk pecan icing.
Ingredients:
  • 1 cup water
  • 4 tablespoons unsweetened cocoa powder
  • 0.5 cup buttermilk
  • 2 eggs, beaten
  • 0.33333334326744 cup buttermilk
  • 1 cup chopped pecans
Instructions:
  • Preheat oven to 350°F (175°C) and prepare a 9x13 inch pan by greasing and flouring it. In a saucepan, melt 1 cup of butter, then stir in 1 cup of water and 4 tablespoons of cocoa powder. Remove from heat and set aside.
  • Combine the baking soda with 1/2 cup of buttermilk in a medium bowl until dissolved. Add the eggs and vanilla, then mix in the cooled cocoa mixture.
  • Combine the flour, sugar, cinnamon, and salt in a large bowl, then create a well in the center and pour in the cocoa buttermilk mixture. Mix until combined, pour the batter into the pan, and bake in the preheated oven for 30 minutes or until a toothpick comes out clean. Spread the warm cake with Buttermilk Pecan Icing for a delicious finish.
  • Create the icing by melting 1/2 cup butter and 4 tablespoons cocoa in a large saucepan. Add 1/3 cup buttermilk and heat until nearly boiling. Stir in confectioners' sugar, vanilla, salt, and pecans. Remove from heat, mix thoroughly, and generously pour over the warm cake.
