Heart-shaped butter cookies with raspberry jam filling, drizzled with chocolate for a romantic Valentine's Day treat.
Ingredients:
  • 3 cups all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup butter, softened
  • 0.75 cup white sugar
  • 1 large egg
  • 2 tablespoons milk
  • 1.5 teaspoons vanilla extract
  • 0.5 cup seedless raspberry jam
  • 4 ounces semisweet chocolate chips
  • 2 tablespoons butter
Instructions:
  • Combine the flour, baking powder, and salt by sifting them together in a bowl; set aside.
  • In a separate bowl, cream together 1 cup of butter, sugar, egg, milk, and vanilla extract until thoroughly combined.
  • Combine and fold both the flour mixture and butter mixture until fully incorporated.
  • Form the dough into a disk, then wrap it in plastic wrap and refrigerate for a minimum of 2 hours.
  • Roll out half of the dough until it is about 1/8-inch thick.
  • Use a large heart-shaped cookie cutter to cut out the cookies from half of the dough, then repeat with the remaining dough.
  • Use a smaller heart-shaped cookie cutter to create heart-shaped centers in half of the cookies.
  • Create a cookie sandwich by placing an open-centered cookie on top of a whole cookie. Place the sandwiched cookies on a baking sheet without greasing it, and set aside.
  • Preheat the oven to 400°F (200°C).
  • Put the raspberry jam in a microwave-safe bowl and microwave on high until it becomes runny, approximately 35 seconds.
  • Using a small spoon, generously top each cookie with a dollop of jam. Chill cookies in the fridge for 10 minutes to set.
  • Bake in the preheated oven for 5 to 8 minutes until cookies are firm to the touch and pale in color.
  • Place the cookies on a wire rack until they have cooled completely.
  • Melt the chocolate and 2 tablespoons of butter in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each interval until smooth, for 1 to 3 minutes, depending on your microwave's power.
  • Drizzle each cookie artistically with chocolate.
  • Lay the cookie on a baking sheet lined with waxed paper and chill until the chocolate hardens, approximately 15 minutes.
