Whip up a quick, no-bake lemon curd dessert with marshmallows, meringue, shortbread, and cream in just 25 minutes.
Ingredients:
  • 900ml thickened cream
  • 400g (1 1/4 cups) bought lemon curd
  • 20 vanilla marshmallows, halved
  • 5 (70g each) bought meringue nests
  • 210g pkt shortbread fingers
Instructions:
  • Whip the cream in a bowl with electric beaters until soft peaks form. Gently fold in 160g (1/2 cup) curd and most of the marshmallows. Crumble 4 meringues and half of the biscuits over the mixture. Carefully stir to combine.
  • Layer the cream mixture, curd, and biscuits in a 2L (8 cup) serving bowl as follows: start with one-third of the cream mixture, then drizzle half of the remaining curd, crumble 2 biscuits on top. Add half of the remaining cream, then layer the rest of the curd and crumble 2 more biscuits on top.
  • Finish by layering the rest of the creamy mixture on top. Crumble the rest of the meringue and biscuits over it. Sprinkle the remaining marshmallows before serving.
