Easy 5-ingredient lemon cake mix cookies, rolled in sugar and baked to sweet, tart perfection.
Ingredients:
  • 1 (15.25 ounce) package lemon cake mix
  • 2 large eggs
  • 0.33333334326744 cup vegetable oil
  • 1 teaspoon lemon extract
  • 0.33333334326744 cup confectioners' sugar for decoration
Instructions:
  • Heat your oven to 375 degrees F (190 degrees C).
  • Incorporate the cake mix, eggs, oil, and lemon extract in a large bowl until fully combined.
  • In batches, spoon teaspoonfuls of dough into confectioners' sugar. Coat dough lightly with sugar and place 2 inches apart on ungreased cookie sheets.
  • Bake in the oven until the bottoms are lightly browned, about 6 to 9 minutes.
