"Simple 5-ingredient dessert that can be made in advance with Jatz crackers for a sweet, salty, and tangy flavor twist."
Ingredients:
  • 2 x 395g cans sweetened condensed milk
  • 600ml ctn thickened cream
  • 20.00 ml grated lemon rind, plus extra, to serve
  • 125ml (½ cup) fresh lemon juice
  • 300g Arnott’s Jatz Original crackers (see note)
Instructions:
  • Beat condensed milk, cream, lemon rind, and lemon juice with electric beaters using the whisk attachment until thickened, about 1 minute.
  • Crush 8 crackers and elegantly transfer them into a small airtight container. Securely seal the container and set it aside for later use.
  • Cover the base of a 8cm-deep, 21cm (base size, 2.5L) round dish with a layer of cream mixture. Add one-quarter of the crackers on top, followed by one-quarter of the cream mixture. Repeat layering with remaining crackers and cream mixture, finishing with a final layer of cream. Smooth the surface and refrigerate for 4 hours or overnight to set.
  • Garnish the pie with the remaining crushed crackers and additional lemon zest before serving.
