Ingredients:
  • 161.25 gm condensed Milk
  • 100g butter
  • 200g granita biscuits
  • 85.00 gm Desiccated Coconut
  • 2 tsp finely grated lemon rind
  • 300.00 gm pure icing sugar
  • 20g butter, softened
  • 52.50 gm lemon juice
Instructions:
  • Prepare a 3cm deep, 15.5cm x 25cm slab pan by greasing it. Line the base and sides with baking paper, making sure to extend the paper 2cm above the edges of the pan.
  • In a small saucepan over medium heat, combine condensed milk and butter. Stir constantly for 5 minutes until smooth. Remove from heat.
  • In a food processor, pulse biscuits until they form fine crumbs. Transfer to a bowl and mix in coconut and lemon rind. Pour in hot butter mixture and combine thoroughly. Press the mixture onto the base of the pan. Cover and refrigerate until firm, about 1 1/2 hours.
  • Prepare the lemon icing by sifting icing sugar into a bowl. Mix in butter and lemon juice, then beat with a wooden spoon until smooth. Spread the icing over the slice and allow it to set at room temperature for 30 minutes. Finally, cut into pieces and serve.
