Deliciously dense lemon pound cake made with sweetened condensed milk, self-rising flour, eggs, and lemon juice. Perfect for strawberry shortcake topping.
Ingredients:
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 4 teaspoons lemon zest (optional)
  • 1 1/4 cup self-rising flour
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while you prepare the loaf pan by spraying it with nonstick spray, lining it with parchment paper, and spraying it again. This step will ensure easy removal of the loaf after baking.
  • In a bowl, combine eggs, sweetened condensed milk, lemon juice, and lemon zest. Stir in flour until just moistened. Transfer batter to the loaf pan.
  • Bake in the preheated oven for 55 to 65 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely on a wire rack before removing from the pan.
