Elevate rocky road with a decadent mix of chocolate, macadamia nuts, cherries, and Arnott's Royals for a heavenly treat.
Ingredients:
  • 150g glacé cherries
  • 400g milk chocolate, chopped
  • 150g roasted macadamia nuts, coarsely chopped
  • 2 x 200g pkts Arnott’s Royals biscuit
  • 50g dark chocolate, chopped
Instructions:
  • Prepare a shallow 20cm square cake pan by lining the base and sides with baking paper, ensuring that 2 sides overhang for easy removal.
  • Gently wash the cherries under cold water, then place them on a paper towel-lined plate to dry before halving them.
  • Place the milk chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Melt and stir until smooth. Set aside 1 tbs of the macadamias. Mix in the cherries and macadamias until combined. Spread over the prepared pan and gently press rows of Royals into the mixture. Let it set for 1 hour.
  • - Lift the rocky road using the overhanging paper and cut into 16 bars. - Melt the dark chocolate in a microwave-safe bowl until smooth, then drizzle it over the bars. - Sprinkle the finely chopped macadamias over the top. - Allow it to set completely.
