Elevate your weeknight dinner with spicy chorizo-infused roast chicken.
Ingredients:
  • 1.8kg whole chicken
  • 125g chorizo, coarsely chopped
  • 125ml (1/2 cup) dry sherry
  • 2 x 400g cans cannellini beans, rinsed, drained
  • 500ml (2 cups) salt reduced chicken style liquid stock
  • Wilted English spinach, to serve (optional)
Instructions:
  • Preheat the oven to 220C/200C fan forced. Preheat a roasting pan in the oven for 5 minutes.
  • Using a sharp knife or kitchen scissors, carefully remove the backbone from the chicken and discard it. Flip the chicken over and flatten it using the heel of your hand.
  • Place the chicken in the roasting pan and scatter the chorizo around it. Roast for 20 minutes or until the chicken starts to brown. Pour in the sherry and continue roasting for 5 minutes or until the liquid is reduced. Add the beans and stock then roast for 35 minutes or until the chicken is fully cooked and the liquid is nearly absorbed.
  • Cut the chicken into pieces, then lightly mash the beans with a potato masher before seasoning. Divide the chicken, chorizo, and beans among serving plates and accompany with wilted spinach, if desired.
