6-ingredient lamington wreath with berry cream recipe

Create a stunning budget-friendly Christmas dessert with just 6 supermarket ingredients - it's unbelievably easy!
Ingredients:
  • 500g frozen strawberries (see notes)
  • 1 tsp vanilla bean paste
  • 505.00 gm Thickened Cream
  • 26 lamington fingers (see notes)
  • 500g small fresh strawberries
Instructions:
  • In a large saucepan over medium heat, combine frozen strawberries and 1/2 cup sugar. Cook and crush strawberries with a wooden spoon for 10 minutes until sugar dissolves. Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes until mixture thickens into a syrupy consistency.
  • Strain the syrup through a fine sieve into a clean jug, discarding any solids. Wash and dry the pan. Return syrup to the pan, stir in vanilla bean paste, and simmer over medium heat for 12 minutes until slightly thickened. Remove from heat and let it cool completely.
  • With an electric mixer, whip the cream and remaining sugar until soft peaks form. Gently mix in 1/3 cup of strawberry syrup to create a swirled effect.
  • Spoon the cream mixture into a large snap-lock bag, then cut off a 2cm corner. Pipe a 23cm ring onto a flat serving plate to create a secure base for the lamingtons.
  • Pipe a dollop of cream mixture onto one lamington. Place the lamington on its side on the cream ring to start assembling the wreath. Pipe a dollop of cream onto the next lamington. Sandwich it in front of the previous lamington on the plate. Repeat with the rest of the lamingtons and cream to create the wreath.
  • Set aside 12 fresh strawberries. Hull and finely dice the rest of the strawberries. Halve 3 of the reserved strawberries. Arrange whole, halved, and diced strawberries on top of the wreath as shown in the picture. Drizzle with the remaining syrup mixture and serve right away.
