Create a decadent strawberry layer cake with just six simple ingredients, topped with fluffy whipped cream.
Ingredients:
  • cooking spray
  • 8 eggs, at room temperature
  • 1.25 cups white sugar
  • 1.25 cups all-purpose flour, sifted
  • 2.5 cups chilled heavy whipping cream
  • 0.5 cup confectioners' sugar, or to taste
  • 1 cup fresh strawberries, sliced
Instructions:
  • Begin by coaxing your oven to a toasty 350 degrees F (175 degrees C). Show some love to two 9-inch round cake pans by giving them a light shower of cooking spray.
  • Using an electric mixer, beat eggs until pale and fluffy for about 4 minutes. Gradually add white sugar and beat until fully incorporated for about 6 minutes. Slowly add flour using a spatula, then beat on low speed for 1 minute.
  • Transfer the batter evenly into the cake pans that have been prepared.
  • Bake in the preheated oven for 25-30 minutes until a toothpick comes out clean from the center. Let it cool in the pans for 5 minutes, then invert onto a wire rack to completely cool for about 25 minutes.
  • Once the cakes are cooling, whip heavy cream with clean beaters until soft peaks form, then gradually add confectioners' sugar while continuing to beat until stiff peaks form.
  • Arrange the strawberries in a uniform layer on top of the cooled cake. Generously spread whipped cream over the strawberries until they are fully covered. Place the second cake layer on top and top it off with the remaining whipped cream for frosting.
