Quick, budget-friendly jam roll cake recipe for a crowd-pleasing treat with minimal ingredients.
Ingredients:
  • 2 eggs, separated
  • 60g caster sugar
  • 50g self-raising flour
  • 20.60 gm hot milk
  • 20.00 gm caster sugar, extra
  • 85g strawberry
Instructions:
  • Preheat your oven to 200°C. Line a 25cm x 31cm Swiss roll pan with non-stick baking paper. Using an electric beater, whip the egg whites until soft peaks form, then gradually add the sugar until dissolved. Gently fold in the egg yolks one at a time.
  • Combine the flour and milk by gently folding them together. Spread the mixture evenly over the tray using a palette knife or flat-bladed knife. Bake for 6 minutes or until it reaches a light golden color.
  • Sprinkle caster sugar on a piece of baking paper. Invert the cake onto the sugared paper and carefully remove the lining.
  • Trim the dry ends by 5mm from the two short edges. Cut the cake in half lengthwise. Warm the jam in a saucepan over low heat until runny (or microwave on high for 10 seconds). Spread the jam over both pieces of cake. Roll up both pieces firmly using parchment paper from the long side. Repeat with the remaining cake, then cut into four rollettes.
