Kids not loving veggies? Whip up a tasty 8 veg pasta sauce, great for ravioli or gnocchi!
Ingredients:
  • 2 carrots, peeled, chopped
  • 2 celery sticks, chopped
  • 1 large red capsicum, deseeded, chopped
  • 1 brown onion, chopped
  • 3 garlic cloves, chopped
  • 80ml (1/3 cup) extra virgin olive oil
  • 2 large zucchini, chopped
  • 200g cup mushrooms, chopped
  • 44.40 gm tomato paste
  • 2 x 400g cans finely chopped or diced tomatoes
  • 700g btl passata
  • 2 large fresh rosemary sprigs
Instructions:
  • Pulse carrot, celery, capsicum, onion, and garlic in a food processor until a coarse paste forms.
  • In a large saucepan, heat oil over high heat. Add the onion mixture and cook over low heat, stirring frequently, for 20 minutes until the vegetables are very soft.
  • Pulse zucchini and mushrooms in the food processor until finely chopped.
  • Combine the zucchini mixture with the pan, cook and stir for 5 minutes until the zucchinis slightly soften. Then add the tomato paste, cook and stir for 2 more minutes until well combined.
  • Combine the tomato, passata, 3 cups of water, and rosemary sprigs in a saucepan. Season to taste. Simmer gently, stirring occasionally, for 1 1/2 hours or until the sauce thickens. Discard the rosemary sprigs before serving.
