Hokkien noodle stir-fry with black bean sauce

Indulge in a savory bowl of vegetable-packed noodles in rich black bean sauce with chopsticks.
Ingredients:
  • 400g pack fresh Hokkien noodles
  • 18.20 gm peanut oil or canola oil
  • 20.00 ml shredded ginger
  • 51.60 gm black bean sauce
  • 28.60 gm honey
  • 1 bunch baby bok choy, trimmed and roughly chopped
  • 1 bunch broccolini, trimmed and roughly chopped
  • 100g snow peas, trimmed
Instructions:
  • Place the noodles in a heatproof bowl and pour boiling water over them. Allow them to sit for 5 minutes before draining and setting aside.
  • In a wok or large frying pan over medium-high heat, heat the oil. Cook ginger for 2 minutes, then stir in the black bean sauce and honey. After a minute, add bok choy and broccolini. Stir fry for 2-3 minutes, then add snow peas and noodles, tossing to coat. Cook for another minute and serve hot.
