Ingredients:
  • 400g beef rump steak, trimmed, thinly sliced
  • 40.00 ml Homemade Chinese Stir-fry Sauce (see notes)
  • 56.88 gm peanut oil
  • 1 small brown onion, cut into thin wedges
  • 1 red capsicum, sliced
  • Extra 82.50 ml Homemade Chinese Stir-fry Sauce
  • 52.80 gm Thai chilli jam paste
  • 3 green onions, cut into 3cm lengths
  • 200g snow peas, trimmed
  • 450g fresh hokkien noodles
  • Sliced red chilli, to serve
  • Extra sliced green onion, to serve
  • Toasted sesame seeds, to serve
Instructions:
  • Combine the beef and stir-fry sauce in a glass or ceramic bowl, ensuring the meat is well coated. Let it marinate for 20 minutes to enhance the flavors.
  • In a large wok over high heat, heat half of the oil until sizzling. Add the beef and stir-fry for 1 minute and 30 seconds until beautifully browned and cooked through. Use a slotted spoon to transfer the beef to a heatproof bowl and set aside.
  • Heat the remaining oil in a wok until sizzling. Add garlic and brown onion, stir-frying for 30 seconds. Follow by adding capsicum and stir-fry for 1 minute. Transfer this flavorful mixture to the bowl with the beef.
  • Pour the additional stir-fry sauce, 3/4 cup water, and chili jam paste into the wok. Stir-fry until the sauce simmers and thickens, about 30-45 seconds. Toss in the green onion and snow peas, stir-fry for another 30 seconds. Enjoy!
  • Combine the beef and capsicum with the noodles in the wok. Stir-fry for an additional 1 minute and 30 seconds, tossing until noodles are warmed. Serve with a topping of chili, green onions, and sesame seeds.
