Creamy mashed potatoes made with buttery Desiree potatoes - perfect for mashing with their soft flesh.
Ingredients:
  • 1.6kg desiree potatoes (see note), peeled, halved
  • 310ml cream
  • 100g butter
Instructions:
  • In a large saucepan, cover potatoes with cold water and bring to a boil over high heat. Simmer for 15 minutes or until tender. Drain thoroughly.
  • In a medium saucepan over low heat, gently warm butter and cream. Press potatoes using a ricer into the creamy mixture (or use a masher for a smooth consistency). Season with salt and white pepper, then stir with a wooden spoon until combined. Serve right away with salad greens and barramundi parcels.
