Succulent chicken meatballs in a creamy coconut adobo sauce, perfect with rice for a delicious meal.
Ingredients:
  • For the meatballs
  • 1 pound ground chicken (90% lean or leaner)
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon kosher salt
  • For the adobo and vegetables
  • 1/2 cup chicken broth
  • 1/2 cup coconut milk
  • 1/4 cup soy sauce
  • 2 1/2 tablespoons distilled white vinegar
  • 2 teaspoons brown sugar
  • 2 tablespoons vegetable oil
  • 4 garlic cloves, thinly sliced
  • 1 medium yellow onion, sliced
  • 4 large carrots, sliced into 1/4-inch thick rounds
  • 1 bay leaf
  • 1 green onion, sliced, for serving
Instructions:
  • Create the meatball mixture by combining ground chicken, egg, breadcrumbs, onion powder, garlic powder, salt, and pepper in a medium bowl, mixing thoroughly.
  • Prepare the adobo sauce mixture by combining broth, coconut milk, soy sauce, vinegar, sugar, and pepper in a 2-cup liquid measuring cup.
  • Cook the meatballs: Heat oil in a large braising pan over medium heat until shimmering. Shape mixture into meatballs using a small cookie scoop or spoon, then gently drop them into the pan. Brown meatballs for 2 minutes on each side until golden brown and opaque all around.
  • Combine all remaining ingredients in the pan: Scoot the meatballs to one side, and add the garlic cloves to the other side. Sauté for 1 minute until browned. Spread out the meatballs, add onion, carrots, and bay leaf, and pour in the adobo sauce mixture. Cover and simmer on medium-low heat for 15 minutes.
  • Enhance the sauce and present: Uncover the pot, increase the heat to medium-high, stir frequently, and simmer for 5 to 7 minutes until the sauce is reduced and has a glossy, thick consistency. Garnish with chopped green onions. Enjoy with rice or cauliflower rice. Keep any remaining portions in a sealed container in the fridge.
