Satisfying African peanut soup with tomatoes, onion, peanut butter, and brown rice.
Ingredients:
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 2 large red bell peppers, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth or stock
  • 1 (28 ounce) can crushed tomatoes, with liquid
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon chili powder
  • 0.66666698455811 cup extra crunchy peanut butter
  • 0.5 cup uncooked brown rice
Instructions:
  • In a large stock pot, heat oil over medium-high heat. Sauté onions and bell peppers until tender. Add garlic and cook for 1 minute. Mix in vegetable stock, tomatoes, pepper, and chili powder. Simmer uncovered on low heat for 30 minutes.
  • Add the rice to the pot and stir it in, then cover and let it simmer until tender for about 15 minutes. Mix in the peanut butter until fully incorporated, then serve and enjoy!
