Ingredients:
  • 2 garlic cloves, crushed
  • 2.40 gm sea salt
  • 2 egg yolks
  • 227.50 gm extra virgin olive oil
  • 21.00 gm lemon juice
  • 11.80 gm wholegrain mustard
  • 20.00 gm water
Instructions:
  • Combine garlic, salt, and egg yolks in a food processor until smooth.
  • While the blender is on, gradually pour in the oil through the feed tube until a thick mayonnaise forms. Then, transfer the mayonnaise to a bowl.
  • Mix in the zesty lemon juice and tangy mustard. Adjust the water to your preference. Seal with plastic wrap and chill in the fridge until needed.
