Air-fried apple pie egg rolls: crispy, sweet dessert without the mess of frying.
Ingredients:
  • 2 medium Granny Smith apples, peeled, cored, and cut into 1-inch chunks
  • 2 tablespoons lemon juice
  • 0.5 cup water
  • 2 tablespoons brown sugar
  • 1.25 teaspoons ground cinnamon, divided
  • 0.5 tablespoon white sugar
  • 6 egg roll wrappers
  • 0.25 cup white sugar
Instructions:
  • Preheat your air fryer to 400°F (200°C).
  • In a saucepan, combine apples with lemon juice and water. Sprinkle brown sugar and cinnamon over apples, then cook on medium-low heat, stirring occasionally, until apples reach desired softness, about 40 minutes.
  • Coat apples with a generous sprinkle of white sugar and give them a good stir. Cook for an additional 5 minutes, then remove from heat and cool for approximately 10 minutes.
  • Place a small bowl of water nearby. Position an egg roll wrapper in front of you with the pointed edges at the top and bottom. Add 1 to 2 tablespoons of the apple mixture along the center of the wrapper.
  • Fold the bottom point of the wrapper up and over the filling, tucking the end around it. Roll up once, moisten the sides, and fold over the edges to create a purse shape.
  • Roll the wrapper completely and seal by lightly brushing with water. Coat the roll with cinnamon-sugar mixture. Repeat the process for the remaining wrappers and filling.
  • Place a piece of parchment paper in the air fryer basket and arrange the finished egg rolls on it. Air-fry for 7 minutes, then flip them over and air-fry until they turn light golden brown, approximately 7 more minutes.
