Indulge in these irresistible buttery cakes topped with fresh berries and whipped cream.
Ingredients:
  • 150g salted butter, chopped, at room temperature
  • 100g (1/2 cup) caster sugar
  • 4.40 gm vanilla extract
  • 2 eggs
  • 200g (1 1/3 cups) self-raising flour
  • 80ml (1/3 cup) milk, at room temperature
  • Icing sugar, to serve
  • Whipped cream, to serve
  • Fresh berries such as raspberries, strawberries or blueberries
Instructions:
  • Preheat your oven to 180C (160C fan forced) and generously grease four 125ml (1/2 cup) silicone muffin pans.
  • Beat together butter, sugar, and vanilla until pale and creamy using electric beaters. Add eggs one at a time, beating well after each addition. Mix in flour and milk until well combined.
  • Fill each muffin hole with a generous 1/4 cup of the mixture. Air fry at 160C for 12 minutes or until golden. Repeat to make a total of 12 cakes. Dust with icing sugar, and serve with whipped cream and fresh berries.
