Air fryer Baci balls recipe

Decadent chocolate surprise treat, ideal for tea or dessert.
Ingredients:
  • 350ml milk
  • 2 tsp (7g sachet) dried yeast
  • 70g raw caster sugar
  • 600g plain flour
  • 35g (1/3 cup) Dutch processed cocoa powder
  • 1 egg, lightly whisked
  • 100g unsalted butter, chopped, at room temperature
  • 2 x 125g pkts Baci Perugina Original Dark chocolates, unwrapped
  • 150g (1 cup) icing sugar
  • 10g Dutch processed cocoa powder
  • 41.20 gm warm milk
  • 10.00 gm melted butter
Instructions:
  • In a large microwave-safe jug, heat the milk until just warm, about 30-40 seconds. Whisk in yeast and 3 tbsp caster sugar. Allow the mixture to sit in a warm spot for 5-10 minutes, until foamy.
  • In the bowl of a stand mixer with the dough hook attachment, combine flour, sugar, and cocoa. Pour in the yeast mixture, add the egg and butter. Mix for 8-10 minutes until a smooth dough forms. If sticky, add more flour, 1 tbsp at a time. Transfer dough onto a floured surface, knead for 1 minute until a ball forms. Place in a greased bowl, cover, and let rise in a warm spot for 1 hour until doubled.
  • Transfer the dough onto a lightly floured surface and knead for 1-2 minutes. Divide into 16 pieces (each weighing 80g). Take one piece at a time, gently flatten and knead it. Place a Baci in the center and wrap the dough around the chocolate, sealing with a twist. Place them on a floured baking tray, seam side down, leaving space between each. Cover with a clean tea towel and let them rise for 30 minutes.
  • Gently nestle 4 dough balls in the air fryer basket and brush them with a touch of melted butter. Air fry at 180C for 8 minutes. Then, move the balls to a wire rack. While they are warm, generously slather each with 1 tablespoon of icing and sprinkle on some chopped Baci. Repeat this process with the rest of the dough, icing, and chopped Baci. Let them sit for 10 minutes to cool slightly before serving. Enjoy!
