Crispy vegan taquitos filled with plant-based beef, creamy vegan cheese, and savory nutritional yeast in an air fryer.
Ingredients:
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 teaspoon minced garlic
  • 1 (12 ounce) package vegetarian ground beef crumbles (such as MorningStar Farms®), thawed
  • 2 canned chipotle chilies in adobo sauce, minced
  • 2 tablespoons adobo sauce from chipotle peppers
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 0.5 (8 ounce) tub vegan cream cheese (such as Toffutti®)
  • 1 tablespoon nutritional yeast
  • 16 corn tortillas
  • cooking spray
Instructions:
  • In a large skillet over medium heat, warm olive oil. Cook onion and garlic for 3 minutes. Stir in vegetarian beef crumbles, chipotle peppers, adobo sauce, cumin, and onion powder. Cook and stir for 5 minutes.
  • Combine cream cheese, nutritional yeast, and salt until the cheese is melted and mixture is smooth, approximately 2 minutes. Take off the heat.
  • Preheat the air fryer to 400°F (200°C).
  • Place a generous tablespoon of the mixture in the center of each tortilla, then roll them up. Arrange the taquitos in a single layer in the air fryer basket with the seam-side facing down. Lightly coat the tops with cooking spray. Air fry for 6 minutes until crispy. Drain on a paper towel-lined plate before serving. Repeat for the remaining taquitos.
