Upgrade Caramilk custard by air frying for a crispy yet gooey texture. Delight your taste buds with this simple hack.
Ingredients:
  • 750ml (3 cups) milk
  • 1 cinnamon stick
  • 2 eggs
  • 2 egg yolks
  • 140g (2/3 cup) caster sugar
  • 105g (3/4 cup) cornflour
  • 1 tsp vanilla bean paste
  • 180g block Caramilk chocolate, chopped
  • 75g (1/2 cup) plain flour
  • Icing sugar, to dust
  • Ground cinnamon, to sprinkle
Instructions:
  • Prepare an 18cm x 28cm lamington pan by greasing it and lining it with baking paper.
  • In a medium saucepan, combine milk and a cinnamon stick, then simmer over medium heat until fragrant.
  • In a large bowl, vigorously whisk together eggs, yolks, caster sugar, cornflour, and vanilla until thoroughly combined. Pour milk mixture over the egg mixture, straining it as you whisk until well combined. Remove the cinnamon stick.
  • Transfer the milk mixture back to a clean medium saucepan. Cook over medium-low heat, stirring constantly, for about 5 minutes until the mixture bubbles and thickens. Once thickened, stir in the Caramilk until smooth.
  • Pour the luscious custard into the pan and gently smooth the top. Allow it to cool for 30 minutes before transferring it to the fridge. Chill for 3 hours or until beautifully firm.
  • Transfer the custard onto a chopping board and slice into 3cm x 5cm fingers. Gently coat each finger with flour, shaking off any extra.
  • Generously coat the air fryer basket with oil. Arrange a small batch of custard pieces in the basket and drizzle with oil. Air fry at 200C for 10 minutes until beautifully golden. Let them cool for 5 minutes before savoring. Repeat with the rest of the custard pieces.
  • Sprinkle custard with a mix of icing sugar and cinnamon before serving.
