Prep celeriac, air fry for crispy fries. Serve with tangy mustard-horseradish sauce.
Ingredients:
  • 0.5 celeriac (celery root), peeled and cut into 1/2-inch sticks
  • 3 cups water
  • 1 tablespoon lime juice
  • 0.33333334326744 cup vegan mayonnaise
  • 1 tablespoon brown mustard
  • 1 teaspoon powdered horseradish
  • 1 tablespoon olive oil
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Place the celery root in a bowl and drizzle with water and lime juice. Stir well and allow to marinate for 20 minutes.
  • Preheat the air fryer to 400°F (200°C).
  • Prepare the tangy mayo sauce by combining vegan mayonnaise, mustard, and horseradish powder. Chill covered in the refrigerator until ready to use.
  • After draining the celery root sticks, pat them dry and return to a bowl. Drizzle with oil, sprinkle with salt and pepper, then toss until evenly coated.
  • Place the celery root in the air fryer, ensuring even cooking. Check halfway through, then shake the basket and crisp up until golden brown, about 18 minutes total cooking time.
  • Immediately serve the fries with a side of vegan mayo.
