Try these Mexican elote-inspired air fryer corn ribs for a fun twist on a classic dish - simply cut corn ears lengthwise and watch them curl up like ribs!
Ingredients:
  • 2 ears fresh corn, husked
  • 3 tablespoons olive oil
  • 1 teaspoon chili powder
  • 0.25 teaspoon garlic powder
  • 0.25 cup mayonnaise
  • 2 teaspoons lime juice
  • 1 teaspoon Mexican-style hot sauce (such as Valentina®)
  • 2 tablespoons crumbled cotija cheese
  • 1 tablespoon chopped cilantro
Instructions:
  • Preheat the air fryer to a toasty 400 degrees F (200 degrees C).
  • Lay an ear of corn on a cutting board and slice it in half lengthwise. Then, slice each half in half lengthwise again. Repeat the process with the remaining ear of corn to yield a total of 8 "ribs".
  • Combine olive oil, chili powder, garlic powder, and black pepper in a small bowl, creating a flavorful mixture. Coat both sides of each rib with the mixture and place them in the air fryer basket.
  • Air fry at 400°F for 12 minutes, remembering to flip halfway through.
  • Combine mayonnaise, lime juice, and hot sauce in a bowl, whisking until well mixed.
  • Place the corn ribs on a serving plate and generously drizzle the sauce over them. Sprinkle cotija cheese and fresh cilantro on top.
