Air fryer salmon bites with spicy soy-ginger marinade for a quick and flavorful dish.
Ingredients:
  • 3 tablespoons oil, such as vegetable, canola or avocado oil
  • 4 tablespoons balsamic vinegar
  • 3 tablespoons soy sauce
  • 1/4 cup brown sugar
  • 2 teaspoons crushed red pepper, or more to taste
  • 1 tablespoon minced ginger
  • 1/2 teaspoon kosher salt
  • 1.25 pounds salmon filets, cut into 1-inch cubes
  • Nonstick cooking spray
Instructions:
  • In a bowl, whisk together balsamic vinegar, brown sugar, oil, soy sauce, garlic, ginger, red pepper, and salt. Reserve half of the marinade for serving.
  • Place the salmon in the delicious marinade, give it a gentle toss to ensure every bite is full of flavor. Cover with plastic wrap and let it chill in the fridge for at least 30 minutes, or up to 4 hours for maximum taste infusion.
  • Preheat the air fryer to 400 degrees F (200 degrees C) for 2 to 3 minutes, or follow manufacturer's instructions. Give the air fryer basket a quick spray with nonstick cooking spray.
  • Place salmon in a single layer in the pan, cooking in batches if needed. Cook until the salmon flakes easily with a fork, is lightly browned, and crisped around the edges, which should take around 6 to 8 minutes. Serve the salmon drizzled with the reserved sauce.
