Make Chef John's air fryer French fries for crispy, low-oil perfection.
Ingredients:
  • 1 pound russet potatoes, peeled
  • 2 teaspoons vegetable oil
  • 0.5 teaspoon kosher salt
Instructions:
  • Collect all the ingredients.
  • Slice each potato into 3/8-inch-thick slices lengthwise, then cut the slices into 3/8-inch-wide sticks. Soak the potatoes in a bowl of cold water for about 5 minutes to release excess starches, then drain.
  • Cover potatoes with boiling water until submerged by a few inches. Allow to rest for 10 minutes. Drain and place on paper towels. Pat dry to remove excess water and let cool completely for at least 10 minutes.
  • In a mixing bowl, combine cooled potatoes with oil and cayenne; toss well to coat.
  • Preheat the air fryer to 375°F (190°C).
  • Arrange potatoes in a double layer in the fryer basket.
  • After 15 minutes of cooking, gently slide out the basket and toss the fries. Return the basket and fry for an additional 10 minutes until golden brown. Transfer the fries to a mixing bowl, sprinkle with salt, and toss to coat. Serve piping hot.
