Try these easy-to-eat Naples street food frittatine: crispy breadcrumb-coated pasta bites filled with flavorful mix. Air-fried for a golden crunch, great for lunch on the move or party finger food loved by kids. Bon appétit!
Ingredients:
  • 200g spaghetti
  • 50g butter
  • 50g (1/3 cup) plain flour, plus extra 1/2 cup
  • 500ml (2 cups) milk
  • 100g sliced ham, chopped
  • 110g (2/3 cup) frozen peas
  • 80g (2/3 cup) grated mozzarella
  • 50g (2/3 cup) finely grated parmesan
Instructions:
  • Prepare the spaghetti in a generously salted pot of boiling water following the instructions on the package until it is cooked to perfection. Drain and keep aside for later use.
  • In a medium saucepan, gently melt the butter over medium-low heat. Stir in the flour and cook for 1 minute. Gradually pour in the milk, stirring continuously until well combined. Bring the mixture to a simmer while stirring constantly. Let it simmer for 3 minutes, stirring occasionally. Take the saucepan off the heat, then season.
  • In a large bowl, mix spaghetti, ham, peas, mozzarella, and parmesan. Add the white sauce and use two wooden spoons to combine thoroughly. Transfer the mixture into a shallow 22cm square dish, pressing down with a spoon to compact it to about a 2cm thickness. Chill in the refrigerator for a minimum of 2 hours until set, or overnight.
  • Put the extra flour in one shallow bowl, whisk the eggs in another shallow bowl, and place the breadcrumbs in a third shallow bowl. Use a 7cm cutter to cut out 8 rounds from the spaghetti mixture. Press any remaining spaghetti mixture together and make two more rounds.
  • Take one round at a time, coat it first in flour, then dip it in egg, letting the extra drip off. Finish by coating it in breadcrumbs and pressing gently to ensure they stick.
  • Preheat your air fryer at 200°C for 5 minutes.
  • Generously coat rounds with olive oil. Cook in 2 batches for around 7 minutes, flipping halfway, until they are crispy and golden brown. Serve while still warm.
