Secret to delicious scones: use lemonade, air fry for perfection!
Ingredients:
  • 525g (3 1/2 cups) self-raising flour
  • 70g (1/3 cup) caster sugar
  • 300ml thickened cream
  • 185ml (3/4 cup) lemonade
  • 4.40 gm vanilla extract
  • Milk, for brushing
  • Raspberry jam, to serve
  • Whipped cream, to serve
Instructions:
  • In a large bowl, mix together flour and sugar, then create a well. Pour in cream, lemonade, and vanilla. Stir gently with a flat-bladed knife until dough forms.
  • On a floured surface, gently knead the dough for 30 seconds until smooth. Shape it into a 2.5cm thick round. Dust a 5.5cm round cutter with flour and cut out scones. Press any leftover dough together and continue until you have 16 scones.
  • Line the air fryer basket with a sheet of baking paper, leaving a 1cm gap around the edges for proper air circulation. Arrange 5 or 6 scones closely on the paper. Lightly brush the tops with milk. Air fry at 160°C for 15 minutes or until they turn golden and sound hollow when tapped. Transfer to a wire rack with care. Repeat twice more with the rest of the scones and milk.
