Air fryer passionfruit custard scrolls recipe

Quick and easy sweet scrolls filled with vanilla custard and tangy passionfruit, baked in an air fryer in 20 minutes. Three passionfruit required.
Ingredients:
  • 300g (2 cups) self raising flour
  • 55g (1/4 cup) caster sugar
  • 60g butter, chilled, chopped
  • 150g ctn mango and passionfruit yoghurt
  • 10.00 gm almond meal
  • 80ml (1/3 cup) premium vanilla bean custard
  • 60ml (¼ cup) fresh passionfruit pulp
Instructions:
  • In a food processor, combine flour, sugar, and butter until they resemble fine crumbs. Then, add yoghurt and process until dough begins to come together.
  • Transfer the dough to a work surface and knead until it is smooth. Roll out the dough on a sheet of baking paper to form a 30 x 30cm square. Sprinkle almond meal over the dough, then spread custard evenly, leaving an 8cm border on one end. Top the custard with passionfruit pulp. Roll the dough tightly from the side without the border to create a log. Trim the ends and cut the log into 8 slices.
  • Prepare the air fryer basket by lining it with baking paper. Arrange the scrolls, cut-side up, closely together on the paper. Air fry at 160C for 20 minutes until they turn golden brown. Let them cool for 5 minutes in the basket before serving warm.
