Air Fryer Reuben-Inspired Mozzarella Sticks

Easy and quick mozzarella sticks with corned beef and sauerkraut, wrapped in crispy egg roll wrappers.
Ingredients:
  • 8 egg roll wrappers
  • 8 teaspoons Dijon mustard
  • 8 slices deli corned beef
  • 8 tablespoons sauerkraut, rinsed and well drained
  • 8 mozzarella string cheese sticks
  • olive oil cooking spray
  • 0.5 cup thousand island salad dressing, or to taste
Instructions:
  • Preheat the air fryer to 390°F (195°C) for optimal cooking results.
  • Place egg roll wrappers on a clean surface, spread with Dijon mustard, leave a 1/2 inch border. Add a slice of corned beef in the center and top with sauerkraut.
  • Lay a mozzarella stick on the bottom tip of the wrapper, roll up tightly halfway. Fold in the sides, then roll until near the end. Moisten your finger with water, seal the top point of the wrapper, and roll to seal it completely.
  • Prepare the air fryer by spritzing it lightly with olive oil spray or lining it with parchment paper. Arrange the mozzarella sticks in the basket with the seam side facing down, ensuring they are not overcrowded. Lightly spray each stick with olive oil.
  • Cook the food in 2 batches, if needed, in the air fryer until golden brown, for 6 to 8 minutes. Serve immediately with thousand island dressing as a dip.
