Air-fried breaded chicken tenders make a delicious Milanese-inspired dish, perfect for any gathering.
Ingredients:
  • 1 pound chicken tenders
  • salt and freshly ground black pepper to taste
  • 2 large eggs, beaten
  • 1 tablespoon water
  • 1 cup Italian-style bread crumbs
  • 0.25 cup plain panko bread crumbs
  • 0.5 teaspoon garlic powder
  • 0.667 cup dry white wine
  • 0.5 cup low-sodium chicken broth
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic, minced
  • 2 teaspoons anchovy paste
  • 0.5 teaspoon dried rosemary
  • 1 teaspoon cornstarch
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat the air fryer to 400°F (200°C).
  • Season chicken tenders generously with salt and pepper.
  • In a bowl, gently whisk together eggs and water. In another bowl, combine bread crumbs and garlic powder.
  • Coat chicken tenders in the egg mixture and breadcrumb mixture, shaking off any extra crumbs. Lightly spray both sides of the tenders with cooking spray before placing them in the air fryer basket.
  • Air-fry chicken tenders for a total of 7 minutes, flipping once, until golden, crispy, and fully cooked with an internal temperature of at least 165°F (74°C).
  • As the tenders cook, mix white wine, chicken broth, balsamic vinegar, garlic, anchovy paste, and rosemary in a large skillet over medium heat. Stir occasionally and simmer until the sauce slightly thickens, about 3 minutes.
  • Combine water and cornstarch in a small bowl, then pour into the sauce. Cook and stir until it slightly thickens. Add parsley and reduce heat to low.
  • Place the air-fried chicken tenders in a skillet. Drizzle sauce over them to coat and heat for 1 to 2 minutes. Serve hot.
