Buttermilk and hot sauce marinated chicken cooked in the air fryer for crispy, oil-free fried chicken.
Ingredients:
  • 2 pounds bone-in, skin-on chicken pieces
  • 2 cups buttermilk
  • 0.5 cup hot pepper sauce
  • 3 teaspoons kosher salt, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon ground cayenne pepper
Instructions:
  • Prepare the chicken by trimming excess fat and placing it in a large bowl. In another bowl, mix buttermilk, hot sauce, and 2 teaspoons of salt, then pour the mixture over the chicken. Ensure each piece of chicken is well coated, cover the bowl, and refrigerate for at least 1 hour, or overnight if desired.
  • Start by preheating your air fryer to a perfect 400 degrees F (200 degrees C).
  • In a shallow bowl or pie dish, mix flour, 1 teaspoon salt, garlic powder, onion powder, oregano, pepper, and cayenne. Remove chicken from buttermilk, shaking off excess, and coat each piece in the flour mixture. Arrange coated chicken in the air fryer basket, making sure not to overcrowd, and work in batches if needed.
  • Air fry the chicken until it turns golden brown, no longer pink in the middle, and the juices run clear, about 20-25 minutes, flipping halfway through. Ensure the chicken reaches an internal temperature of 165°F (74°C) when tested with an instant-read thermometer.
  • Continue the process with the remaining chicken.
