Upgrade your picnic game with our modern twist on the classic British scotch egg. Hard-boiled eggs enveloped in savory pork sausage, coated in crispy breadcrumbs, and air-fried for a healthier take on this beloved snack. Enjoy at picnics, parties, or as a tasty pub-inspired treat!
Ingredients:
  • 600g pork sausages
  • 20.00 ml Italian herb mix
  • 6 hard-boiled eggs
  • 2 eggs, lightly whisked
  • 75g (3/4 cup) dried breadcrumbs
  • Tomato chutney, to serve
Instructions:
  • Remove the casings from the sausages and discard. Combine the sausage mince and herb mix in a medium bowl, mixing well. Divide the mixture into 6 equal portions.
  • Take a portion of the mince mixture and flatten it into a thin round. Put a hard-boiled egg in the middle and shape the mince around the egg until fully enclosed. Repeat with the rest of the mince mixture and hard-boiled eggs.
  • Dip balls in beaten egg, then coat with breadcrumbs for a crispy finish.
  • Lightly coat the air fryer basket with oil. Add eggs to the basket and generously spray with oil. Air fry at 200C for 20 minutes, remember to flip and spray eggs halfway through. Serve with tomato chutney.
